Why we cook

Built for the table you bring everyone to.

The Crab Bay was born from a love of the rolled-up-sleeves, plastic-bib-wearing, hands-deep-in-the-bag style of seafood that defines a great Louisiana boil. We wanted that energy in San Jose — a place where friends and families gather, sauce flies, and nobody asks for a fork.

Our kitchen runs on one rule: don't compromise. Whole crab, jumbo shrimp, mussels, clams, and lobster come in fresh; vegetables and aromatics are sourced locally; and our four house sauces are simmered from scratch every day.

Whether you're crashing a long table with friends or grabbing a Po' Boy on your way home, we're here for it.

Every one of our four house sauces is built from our own Cajun seasoning blend, then simmered with garlic, butter, fruit, vegetables, or citrus — never a shortcut, never a jar.

Boils are tossed in your sauce of choice and bagged the moment they're ready. Po' boys are stuffed full. Bowls come deep. Welcome to the table.

In the kitchen

Cajun the way we like it.

The base of everything we cook is our own Cajun spice blend — warm, peppery, layered with paprika, garlic, and a slow build of heat. From there, the sauces split into different personalities: rich and buttery for Backyard Boil, sweet and bold for The Whole Nine Yards, bright and tangy for Lemon Pepper, or all of them at once in the House Special.

Every boil is finished bag-side: seafood, sausage, potato, and corn dropped into a hot bag, sauce ladled over, then closed and shaken until everything glistens. That's how it gets to your table.
